Recipe Yields 5 Pounds
Ingredients
1 (12 ounce) package milk chocolate chips
1 (12 ounce) package semi-sweet chocolate chips
1 (12 ounce) package dark chocolate chip
2 (7 ounce) jars marshmallow cream
2 teaspoons pure vanilla extract
2/3 cup Bailey's Irish Cream
2 cups chopped nuts (optional)
4 1/2 cups sugar
1 (12 ounce can) evaporated milk
1/2 pound butter (1 cup)
Directions
In a very large bowl, combine all packages of chocolate chips, both jars of marshmallow cream, 2 teaspoons pure vanilla extract, Irish Cream, and nuts if you are adding them.
Set the mixture aside.
Lightly butter the bottom of a 10 X 15 inch pan. (Rub the empty butter wrapper on the pan.)
In a medium sized saucepan, combine 4 1/2 cups sugar, 1 can of evaporated milk, and 1/2 pound of butter.
Bring to a gentle boil over medium heat first and then cook slowly, stirring constantly for about 10 minutes.
Pour the milk mixture into the very large bowl containing the chocolate chip mixture.
Stir slowly by hand to combine. It is very important to do this by hand and NOT use any kind of mixer.
Pour the fudge into the prepared pan and chill until set.
I love this recipe. It always comes out creamy, and the Bailey's adds a nice flavor.
Since the Bailey's Irish Cream is not combined with the ingredients that are brought to a boil, the alcohol probably doesn't cook out of the candy. The recipe calls for only 2/3 cup Bailey's and yields 5lbs. So, no need to worry about getting tipsy unless you plan on eating the whole batch, which I highly discourage.
I don't recommend allowing children to eat this fudge, primarily due to the 4 1/2 cups of sugar and 14 ounces of marshmallow cream. That's enough sugar to send littles into orbit around the moon for a week.
If you have to ask how many calories are in the 5lb batch of fudge or in a serving, you shouldn't eat it. I don't know the calorie count, but it's a lot. For Pete's sake, it has 4 1/2 cups of sugar and 14 ounces of marshmallow cream. I only make it once a year at Christmas and give most of it away, so I don't eat the whole batch.
I inform the candy recipients that it contains alcohol. If they reply that the alcoholic content cooks out, I share my theory regarding why I don't agree. They're adults. They've been warned and can make their own decisions.
Remember, eat fudge responsibly. Or at least don't operate large machinery soon after consumption.
